.:next order:.

i was super duper tired today, not because the numbers of order. but lack of sleep due to brain disfunctional. why? goshhh sometimes decorating cuppies can be hard especially when the ideas 'ran' away. it took me about 2 hours to have these idea. sometime when customer said "up to you to deco" my respond will be "owh dear". this cuppies were ordered by hubby's friend. hope he enjoy eating the cuppies. he should or else i will feel double the tiredness!

then right after finish deco the cuppies, i took bath and nap. right after my nap, wake up and star deco cuppies for my lil brother. actually his burfday will be tomorrow but he's celebrating it today (as 1 Feb is public holiday for federal territory) with his friend at al quran learning centre. i bake choc moist cuppies and orange with strawberry fillings. goshhh i just love to work with wilton's icing colour. the colour turn out so smooth and nice. the best part is, my red buttercream is RED! and to tell the truth, it is really difficult to deco cuppies for boys! especially when im out of idea! finally i gave up and draw flowers :P sorry ya dik. itu je yang kak long mampu buat. to tired

.:mixed fruit plait:.

my 3rd bread making. now u know right how much i love bread and i just cant stop from making bread! but i need to get a break from making bread :P nanti orang jemu pulak. so this time i try out the mix fruit plait.


ingredients:
(A)
250g bread flour
35g sugar
1/2 tsp salt
10g milk powder (i use fresh milk)
2 tsp instant yist

(B)
1 egg
10ml cold water

(C)
30g butter

(D)
120g mixed fruit
1/4 tsp cinnamon powder

methods:
1. wash mixed fruit and let them dry
2. mix (A) till well mix and then add (B). knead to form dough
3. add (C) and continue knead to form a smooth and elastic dough
4. add (D) and mix until well blended. let it prove for about 60mins @ double the size
5. divide dough into 100g per piece and roll into balls. rest them for 10 mins
6. roll out the dough into 6 long strips (30cm long, which i didnt follow exactly), then plait 3 pieces together. can make 2 plaits.
7. prove for 45mins or till double the size
8. brush with egg wash and bake at 180ºC for 20mins.


note:
i make half the dough and to make it more shinier, i brush with butter right after those bread came out from oven

.: heating up the new stove:.

yeyyy finally the technician of this house came and fix the new stove. goshhhh i love the new stove from elextrolux. wish i can have 1 too! so worries no more as i can bake more at 1 time. cuma teruk la kan nak kena jaga 2 stove :P

this is 2nd time nana JPM order from me. but she requested her carrot walnut frosted with buttercream. well, customer always right. nana, next time ya i do the tiramisu cuppies. and this is the 1st time i use coloured as background of the cuppies. then shelly from bangi ordered choc moist cake. it was for double celebration (am i right shelly). i am so glad that u and your family love it. thank you so much shelly.

.:cheesecake promotion:.

i love to make cheesecake. especially blueberry cheesecake :D so thinking of that, i would like to do a little promotion on the cheesecake. there are only 2 sizes of cheesecake, which are:

1. 4.5" = RM20
2. 6" = RM35

for 4.5", minimum order is 2 cakes. this promotion end on the 15th February 2008.

.:danish pastries:.

actually im quite 'malu' (ashame) to upload this entry. but what the heck rite. the taste still meet the standards. after all, this is the 1st time i did this danish pastries.


Ingredients: (A)
280g bread flour (high protein)
120g plain flour
55g sugar
1 tsp salt (i use less than this)
1 1/2 tsps milk powder (i use fresh milk)
4 tsps instant yeast

(B)
190ml cold water
1 egg (i use grade A)

(C)
40g butter

(D)
200g pastry margarine
Methods:
1. mix (A) until mix. add (B) and knead to form dough. add water a little bit if dough were not form.
2. add (C) and keep on knead until the dough smooth. once smooth, take out and roll into rectangular shape. wrap with clear plastic and keep in freezer for 1 hour.
3. wrap (D) in a clear plastic and roll into rectangular shape (more or less half size from the dough). take out the dough from freezer and roll into 10mm thick. then put (D) onto the dough and fold it.
4. roll the dough about 10mm thick. then fold into 3 section (overlapping) and roll into 10mm again. repeat this step again and keep in the fridge from about 20mins. *make sure to wrap the dough with clear plastic.
5. repeat step 4 again and keep the dough in the fridge for about 30mins.
6. divide the dough into 2 portion and roll it about 4mm thick.
7. spread with some custard or jam or whatever u like to spread with (i use blueberry fillings) and sprinkle with some raisins.
8. roll up the dough legthwise (like Swiss roll) and cut into 12 portions (i cut into various sizes :P)
9. put onto baking tray. light press to flat the danish pastries and then put half cherry on top of it. prove for about 45mins and the brush with egg wash
10. bake about 15mins at 190ºC

since ive settle something behind aerlier than my schedule and already received the photos from shooting last december, i think better for me to update the entry before i get busy again. Team from Geranium Studio would like to do shooting experiment on foods. since i know them, they ask me something that i was very delightful. photo shooting for my cuppies. yayyy! great rite :D and gosh, i love their end product. so marvelous! so enjoy the few photos captured by them.

.:red bean stollen bun:.

first of all, this is not for sale :P just want to share my passion and obsession toward breads. omg! i love to eat bread sooooo much. even when i carried my daughter in my tummy, i prefer to eat bread rather than nice. maybe that explain why my lil gurl chubby like the bread dough while proving LOL. i had a negative perception on baking bread since the steps sound messy and tedious. but surprisingly, after i get the right technique, alhamdullilah, my breads turn out very well for a beginner like me (tak attend memana kelas buat roti tau). and of course, my role model in bread making is MamaFaMi. i adore all her breads! how i wish we are neighbors :P okay less talk, i did these red bean stollen bun from her fp. and i am so happy to see my red bean stollen bun been stole by members of the house :P so heres the recepi. and to MamaFaMi, thank you so much for sharing the nice recepi.

my red bean stollen bun

ingredients (i copy & paste directly from MamaFaMi :
800g flour
300g lukewarm water (the amount may vary according to the flour)
120g castor sugar
50g margarine
2 packets (22 g) dried instant yeast
2 eggs (small)
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon milk powder
1 teaspoon bread improver

Method :

1. Place flour, castor sugar, dried instant yeast, eggs, salt, baking powder, milk powder and bread improver in a mixing bowl.
2. On the mixer and pour water, a little at a time until the flour almost combined.
3. Add in the margarine and continue kneading. Add more water if needed. Knead till a soft and smooth dough is formed.
4. Make into a big round ball and leave to prove till double the size (about an hour or so, depending on the temperature of your place).
5. Punch down the dough to let the air out. Knead and ready to shape.
6. Bake in a preheated oven at 180 C for 18 - 20 minutes.

still feel dizzy after finish doing the saturday's delivery. but i cant rest cause i still have 1 order for sunday. this time it is from Dr Hanin, Putrajaya Hospital. she wanted to give to her nurse i guess. betul ke doc? hope u, the nurses & ur family enjoy eating those cuppies as well as i enjoy making it. thank you doc!

i was super busy for the past 2 days in the row. the order is not that much, but the details were very particular and i need lots of time doing this! its quite challenge for me to complete this orders since it needs 101% concentration. but frankly speaking, i love the out put! seriously in love doing this kind of order. very details but yet, soooooo cute (prasan sungguh la aku ni :P). this order were placed by my jr of SEMSAS, aida. its for he eldest son who is turning 4 years old. and the best part when i received a very happy sms said that they enjoy the cakes. next order that i need to complete at the same day, the same time is from erna. she didnt have any specific designs for me to do, but she just request to wrote something on the cuppies. sorry erna that i really forgot to put "atuk & cik adie". wanted to call @ sms her but it is 330am. tak kan nak sms kan. so i just put word happy birthday. and the last order for that day is from liza, upm. lucky me that she order the most simplest cake, that is mini carrot walnut. so that wrap up for saturday's order.

.:the choclaty week:.

why did i call like that? because last week most of the ordered base from choc! and the best part is, i do love choc so much! who doesnt rite? mona ordered mini chip choc for her son, adam hakimy 2nd birthday bash. actually she also did ask me to do the big cake but i have to reject since im not 'brave' enough to do birthday cake with theme. so i said to her, that i would give as a token for the bash but i will do in the simple way. no fussy deco. so that day i bake 40 mini chip choc and 1.7kg choc moist cake.

next chocolaty order from sabrina. shes my ex-colleague at MAMPU (now shes at the MOHE). today is her 3rd anniversary. she ask me to do what ever the theme as long as sweet. erkk, kindda blur what to deco actually. but finally at 3am i finished deco it. hope sabrina & kamil enjoy the cuppies as well as i do enjoy bake & deco it. to sab & kamil, happy 3rd anniversary and may u both ive happily forever. btw sab, omg!!!! u are driving my dream 4wheels car!

.:the wedding fever:.

last week, ina ordered the mini chip choc for a wedding. no... no its not the gift to guest, but it is gift for hantaran. ina request 2 boxes of mini chip choc with different colours, purple and green. since i know the box that i always use didnt have other colors other than silver and gold, so i did something else. heres the output!
